According to Sandrine Marquet, this is what the video is telling us:

This man was the architect in charge of the building for 13 years. 
He is saying that the 800 year old oak wood would be so hard that it would be really difficult, almost impossible to get it to burn. You would need a lot of twigs and sticks to start the fire first. 

He does not believe that it is possible that the fire started so quickly.

In 2010, the whole safety and electricity system had been totally reviewed.
The fire detection system could detect instantly any fire starting. 
Two safety guards are at the entrance of the cathedral 24 hours. 

There is also a testimonial going around on facebook from a former student who worked there. She says that the protection and safety measures were such that she also does not believe that a fire was possible
